Buttery Sour Cream Potatoes (pappas Con Mantequilla)

- 6 medium potatoes (washed)
- 8 ounces sour cream
- 1/4 cup butter (1/2 a stick)
- 3 -4 slices thick cut bacon
- salt
- water
Recipe
- 1 in a large pot, add about 8 cups water. bring water to boil. cut the potatoes in half and place in pot. cook for about 20 minute or until tender but not overcooked.
- 2 meanwhile potatoes are cooking, set oven to 425°f in a baking sheet, place bacon in long strips and cook in oven for about 15 minute or until crispy. once done, remove from oven and drain on a paper towel. when cooled, crumble bacon in a dish and set aside.
- 3 drain the potaotes and let cool. when cool enought to handle, peel the potatoes and cut each cooked potatoe in half.
- 4 in a frying pan, melt the butter. important: once butter is melted, turn heat to low and add the sour cream. add the potatoes. add salt to taste. mix together slowly over the low heat for about 3 minute or until heated thru.
- 5 turn off stove and add crumbled bacon. stir bacon in gently.
- 6 serve warm as a side dish.
