Carrot Potato Casserole

Ingredients

- 3 tablespoons butter
- 3 tablespoons flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups milk
- 1 cup shredded cheddar cheese, divided
- 3 cups grated peeled uncooked potatoes
- 1 cup grated carrot
- 2 tablespoons grated onions
Recipe
- 1 in a saucepan over medium heat, melt butter.
- 2 whisk in the flour, salt and pepper until smooth.
- 3 gradually stir in milk.
- 4 bring to a boil; cook and stir 2 minutes.
- 5 reduce heat; add 1/2 cup cheese, stirring until melted.
- 6 add the potatoes, carrots, and onion.
- 7 transfer to a greased 8-in. square baking dish.
- 8 cover and bake at 350 degrees for 1 hour.
- 9 uncover; sprinkle with the remaining cheese.
- 10 bake 15 minutes longer or until potatoes are tender.
