Carrot Potato Casserole

Ingredients

  • Servings: 6
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups milk
  • 1 cup shredded cheddar cheese, divided
  • 3 cups grated peeled uncooked potatoes
  • 1 cup grated carrot
  • 2 tablespoons grated onions

Recipe

  • 1 in a saucepan over medium heat, melt butter.
  • 2 whisk in the flour, salt and pepper until smooth.
  • 3 gradually stir in milk.
  • 4 bring to a boil; cook and stir 2 minutes.
  • 5 reduce heat; add 1/2 cup cheese, stirring until melted.
  • 6 add the potatoes, carrots, and onion.
  • 7 transfer to a greased 8-in. square baking dish.
  • 8 cover and bake at 350 degrees for 1 hour.
  • 9 uncover; sprinkle with the remaining cheese.
  • 10 bake 15 minutes longer or until potatoes are tender.
