Ingredients

- 6 slices bacon
- 6 cups frozen cubed hash brown potatoes
- 3/4 cup chopped green pepper
- 3/4 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 6 eggs
- 1/2 cup shredded cheddar cheese
Recipe
- 1 cook bacon in large skillet until crisp.
- 2 remove bacon, crumble, and set aside.
- 3 drain drippings, reserving 2 tablespoons in skillet.
- 4 add potatoes, green peppers, onion, salt, and pepper to drippings.
- 5 cook and stir for 2 minutes.
- 6 cover and cook, stirring occasionally, until potatoes are brown and tender (about 15 minutes).
- 7 make 6 wells in potatoes and break one egg into each well.
- 8 cover and cook on low heat 8-10 minutes, or until eggs are completely set.
- 9 sprinkle with cheese and bacon.
