Country Breakfast Skillet

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 6 slices bacon
  • 6 cups frozen cubed hash brown potatoes
  • 3/4 cup chopped green pepper
  • 3/4 cup chopped onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 eggs
  • 1/2 cup shredded cheddar cheese

Recipe

  • 1 cook bacon in large skillet until crisp.
  • 2 remove bacon, crumble, and set aside.
  • 3 drain drippings, reserving 2 tablespoons in skillet.
  • 4 add potatoes, green peppers, onion, salt, and pepper to drippings.
  • 5 cook and stir for 2 minutes.
  • 6 cover and cook, stirring occasionally, until potatoes are brown and tender (about 15 minutes).
  • 7 make 6 wells in potatoes and break one egg into each well.
  • 8 cover and cook on low heat 8-10 minutes, or until eggs are completely set.
  • 9 sprinkle with cheese and bacon.
