Country Dijon Baked Tomatoes

Ingredients

- 4 medium potatoes, peeled (1 pound)
- 1 egg
- 3 tablespoons dijon mustard, grey poupon country dijon
- 1 tablespoon butter or 1 tablespoon margarine
- 1/4 cup heavy cream
- 6 medium tomatoes
- buttered bread crumb
Recipe
- 1 in medium saucepan, cook potatoes until tender.
- 2 drain.
- 3 mash.
- 4 add egg, mustard, butter and heavy cream.
- 5 continue mashing until smooth.
- 6 slice tops from tomatoes.
- 7 scoop insides to form shell.
- 8 arrange in shallow baking pan.
- 9 fill with potato mixture.
- 10 sprinkle with crumbs.
- 11 bake in preheated 450ºf oven 8 to 10 minutes.
