Country Dijon Baked Tomatoes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 4 medium potatoes, peeled (1 pound)
  • 1 egg
  • 3 tablespoons dijon mustard, grey poupon country dijon
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1/4 cup heavy cream
  • 6 medium tomatoes
  • buttered bread crumb

Recipe

  • 1 in medium saucepan, cook potatoes until tender.
  • 2 drain.
  • 3 mash.
  • 4 add egg, mustard, butter and heavy cream.
  • 5 continue mashing until smooth.
  • 6 slice tops from tomatoes.
  • 7 scoop insides to form shell.
  • 8 arrange in shallow baking pan.
  • 9 fill with potato mixture.
  • 10 sprinkle with crumbs.
  • 11 bake in preheated 450ºf oven 8 to 10 minutes.
