Buttermilk Mashed Potatoes

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 lbs potatoes, peeled, cut into 1-inch cubes
  • 2 cups water
  • 1 cup chicken broth
  • 6 garlic cloves, peeled
  • 1/2 cup 1% fat buttermilk
  • 1/4 cup thinly sliced green onion
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 in a large saucepan, combine the potatoes, water, broth and garlic.
  • 2 cover potatoes and bring to a boil.
  • 3 reduce the heat and simmer for 12-15 minutes or until potatoes are tender.
  • 4 in a smaller saucepan, heat buttermilk until warm.
  • 5 drain potatoes and garlic; mash with buttermilk.
  • 6 stir in onions, salt and pepper.
