Buttermilk Mashed Potatoes

Ingredients

- 2 lbs potatoes, peeled, cut into 1-inch cubes
- 2 cups water
- 1 cup chicken broth
- 6 garlic cloves, peeled
- 1/2 cup 1% fat buttermilk
- 1/4 cup thinly sliced green onion
- 1 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 in a large saucepan, combine the potatoes, water, broth and garlic.
- 2 cover potatoes and bring to a boil.
- 3 reduce the heat and simmer for 12-15 minutes or until potatoes are tender.
- 4 in a smaller saucepan, heat buttermilk until warm.
- 5 drain potatoes and garlic; mash with buttermilk.
- 6 stir in onions, salt and pepper.
