Cilantro-chili Potatoes

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 8 -10 small red potatoes, quartered and unpeeled
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • salt and pepper
  • 1/2 cup fresh cilantro, chopped (packed)

Recipe

  • 1 in a medium saucepan cook potatoes in water until tender.
  • 2 drain and keep warm.
  • 3 meanwhile, in another saucepan melt butter; add garlic, stirring for 2-3 minutes.
  • 4 add potatoes, chili powder, cilantro, salt and pepper.
  • 5 lightly brown and serve warm.
