Chicken Booyah, Wisconsin Style

Total Time: 5 hrs Preparation Time: 1 hr Cook Time: 4 hrs

Ingredients

  • Servings: 36
  • 4 whole stewing chicken
  • 2 lbs beef shanks
  • 3 lbs lamb shoulder
  • 4 garlic cloves
  • 10 cups water
  • 4 cups chicken stock
  • 4 garlic cloves
  • 4 large carrots
  • 1 cup celery
  • 6 large potatoes
  • 2 cups green beans
  • 10 diced roma tomatoes
  • 1 cup peas
  • 1 teaspoon rosemary
  • 1 teaspoom salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons parsley

Recipe

  • 1 brown all meats.
  • 2 add: all vegetables and liquids into pot.
  • 3 build a fire under 40 quart stock pot.
  • 4 bring pot to a boil uncovered.
  • 5 add spices and anything left or brought in to add to pot.
  • 6 low simmer for 4 hours.
  • 7 stir often and add water to cover everything.
  • 8 serve with oyster crackers.
