Comfortable Yams

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 96 ounces cut yams in syrup
  • 1/2 cup butter (not margarine, it's a disaster)
  • 1 cup dark brown sugar
  • 1 fluid ounce southern comfort
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1/4 teaspoon mace
  • 1/4 teaspoon cardamom
  • 1 tablespoon pure vanilla extract
  • 1 cup ginger ale (i prefer vernor's, but any good ginger ale or ginger beer will do)
  • 1 (16 ounce) bag mini marshmallows

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 coat 1 deep casserole dish with butter or non-stick cooking spray.
  • 3 combine southern comfort, vanilla, brown sugar and spices until well blended and sugar is dissolved.
  • 4 drain yams and pour into casserole dish.
  • 5 cut butter into small cubes and distribute among the yams.
  • 6 pour spice mixture over yams and toss to coat evenly.
  • 7 bake until bubbly, about 30 mins, remove from oven.
  • 8 add enough mini-marshmallows to cover yams and place under broiler until golden brown.
  • 9 allow to cool 10 minutes before serving.
