Corn And Kumara Cakes

Total Time: 21 mins Preparation Time: 15 mins Cook Time: 6 mins

Ingredients

  • 2 cups mashed kumara
  • 2 cups canned corn kernels, drained
  • 1 egg, lightly beaten
  • 2 tablespoons parsley, chopped
  • 2 tablespoons chives, chopped
  • flour, for dusting
  • 2 tablespoons olive oil
  • tomato, sauce to serve

Recipe

  • 1 place first 5 ingredients in a bowl.
  • 2 mix to combine.
  • 3 season to taste.
  • 4 form 1/4 cup measures into flat patties.
  • 5 lightly dust with flour.
  • 6 place on lined tray.
  • 7 chill 10 minutes.
  • 8 heat oil in non stick fry pan.
  • 9 cook patties for 3 minutes each side till golden.
  • 10 serve with sauce or chutney hot, cold or at room temperature.
