Corn And Kumara Cakes

Ingredients
- 2 cups mashed kumara
- 2 cups canned corn kernels, drained
- 1 egg, lightly beaten
- 2 tablespoons parsley, chopped
- 2 tablespoons chives, chopped
- flour, for dusting
- 2 tablespoons olive oil
- tomato, sauce to serve
Recipe
- 1 place first 5 ingredients in a bowl.
- 2 mix to combine.
- 3 season to taste.
- 4 form 1/4 cup measures into flat patties.
- 5 lightly dust with flour.
- 6 place on lined tray.
- 7 chill 10 minutes.
- 8 heat oil in non stick fry pan.
- 9 cook patties for 3 minutes each side till golden.
- 10 serve with sauce or chutney hot, cold or at room temperature.
