Baked Potato Skins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 16
  • 4 medium baking potatoes, baked and cooled
  • 1/2 cup finely chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 tablespoons butter
  • 1/2 teaspoon dried dill (optional)
  • 1/4 teaspoon salt (optional)
  • 3 dashes tabasco sauce
  • 1 cup shredded low-fat cheddar cheese

Recipe

  • 1 prehead oven to 450 degrees.
  • 2 cut each potato into fourths.
  • 3 hollow out all but 1/4 inch of potato.
  • 4 in a small skillet, saute onion and green pepper in butter until tender.
  • 5 add dillweed, salt, and tabasco sauce.
  • 6 spread on potatoes and bake for 12 minutes or until crisp.
  • 7 top with cheese.
  • 8 return to oven until cheese melts.
  • 9 serve hot.
