Baked Potato Skins

Ingredients

- 4 medium baking potatoes, baked and cooled
- 1/2 cup finely chopped onion
- 1/2 cup chopped green bell pepper
- 2 tablespoons butter
- 1/2 teaspoon dried dill (optional)
- 1/4 teaspoon salt (optional)
- 3 dashes tabasco sauce
- 1 cup shredded low-fat cheddar cheese
Recipe
- 1 prehead oven to 450 degrees.
- 2 cut each potato into fourths.
- 3 hollow out all but 1/4 inch of potato.
- 4 in a small skillet, saute onion and green pepper in butter until tender.
- 5 add dillweed, salt, and tabasco sauce.
- 6 spread on potatoes and bake for 12 minutes or until crisp.
- 7 top with cheese.
- 8 return to oven until cheese melts.
- 9 serve hot.
