Baked Potato Soup (guiltless)

Ingredients

  • Servings: 4
  • 2 baking potatoes
  • 1/4 cup butter or 1/4 cup margarine
  • 1/2 cup onion, chopped
  • 1/4 cup flour
  • 2 1/2 cups skim milk
  • 1 (14 ounce) can fat-free evaporated milk
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • salt
  • 1 cup low-fat sour cream
  • cheddar cheese
  • green onion

Recipe

  • 1 bake potatoes until done. chop 1-1/2 coarsely, mash or chop the other half potato finely.
  • 2 melt 1 tbsp of butter in pan and saute the onion.
  • 3 remove onion to soup pot and melt remaining butter, then add flour and simmer until light golden.
  • 4 add 1/2 cup cold milk and whisk to blend until no lumps are present. add mixture to onions in soup pot.
  • 5 add potato and remainder of milk, along with evaporated milk.
  • 6 add pepper and garlic powder and heat until it begins to thicken but does not boil.
  • 7 add sour cream, cook until heated through.
  • 8 serve with cheese and green onions as garnish.
