Baked Potato Soup (guiltless)

Ingredients
- Servings: 4
 
- 2 baking potatoes 
 
- 1/4 cup butter or 1/4 cup margarine 
 
- 1/2 cup onion, chopped 
 
- 1/4 cup flour 
 
- 2 1/2 cups skim milk 
 
- 1 (14 ounce) can fat-free evaporated milk 
 
- 1/4 teaspoon pepper 
 
- 1/2 teaspoon garlic powder 
 
-  salt 
 
- 1 cup low-fat sour cream 
 
-  cheddar cheese 
 
-  green onion 
 
Recipe
- 1 bake potatoes until done. chop 1-1/2 coarsely, mash or chop the other half potato finely. 
 
- 2 melt 1 tbsp of butter in pan and saute the onion. 
 
- 3 remove onion to soup pot and melt remaining butter, then add flour and simmer until light golden. 
 
- 4 add 1/2 cup cold milk and whisk to blend until no lumps are present. add mixture to onions in soup pot. 
 
- 5 add potato and remainder of milk, along with evaporated milk. 
 
- 6 add pepper and garlic powder and heat until it begins to thicken but does not boil. 
 
- 7 add sour cream, cook until heated through.
