Borscht

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 1 lb bacon, finely cut
  • 7 medium potatoes, diced
  • 7 carrots, diced
  • water
  • 2 tablespoons salt
  • 1/2 teaspoon pepper
  • 1 large onion, finely diced
  • 5 large beets, shredded
  • 3 tablespoons vinegar
  • sour cream

Recipe

  • 1 brown bacon well but not crisp.
  • 2 add onions, potatoes, carrots and saute for 5 minutes.
  • 3 fill dutch oven 1 1/2 inches from the top with water.
  • 4 add salt, pepper and shredded beets.
  • 5 cook 20 minutes on medium heat.
  • 6 add vinegar and cook until vegetables are tender.
  • 7 about 30 to 45 minutes.
  • 8 this is best if refrigerated over night, then served.
