Boulangère Potatoes

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 2 onions, thinly sliced
  • 3 fresh thyme sprigs
  • 2 tablespoons olive oil
  • 3 lbs floury potatoes, peeled and sliced thinly
  • 1 3/4 cups vegetable broth
  • salt and pepper

Recipe

  • 1 heat oven to 400°f
  • 2 fry the onions and thyme sprigs in the oil until softened and lightly coloured (about 5 mins).
  • 3 spread a layer of potatoes over the base of an oiled gratin dish.
  • 4 sprinkle over a few onions season and continue layering, finishing with a layer of potatoes.
  • 5 pour over the broth and bake for 50-60 mins until the potatoes are cooked and the top is golden and crisp.
