Buttery Baked Red Potatoes

Ingredients
- Servings: 6
- 1 large sweet onion (i use yellow or vidalia)
- 3 -4 tablespoons butter
- 6 -8 medium red potatoes
- kosher salt
- ground black pepper
Recipe
- 1 preheat oven to 350.
- 2 melt butter in large skillet.
- 3 chop onion, and add to melted butter; saute until caramelized (there may still be butter pooled at the bottom of the pan- that's okay!).
- 4 meanwhile, chop potatoes into thirds; cook in boiling water until just tender.
- 5 drain cooked potatoes and place in greased 13x9 casserole.
- 6 top evenly with caramelized onions and butter.
- 7 sprinkle with kosher salt and fresh ground black pepper to taste.
- 8 bake at 350 for 15-20 minutes.
