Buttery Baked Red Potatoes

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 large sweet onion (i use yellow or vidalia)
  • 3 -4 tablespoons butter
  • 6 -8 medium red potatoes
  • kosher salt
  • ground black pepper

Recipe

  • 1 preheat oven to 350.
  • 2 melt butter in large skillet.
  • 3 chop onion, and add to melted butter; saute until caramelized (there may still be butter pooled at the bottom of the pan- that's okay!).
  • 4 meanwhile, chop potatoes into thirds; cook in boiling water until just tender.
  • 5 drain cooked potatoes and place in greased 13x9 casserole.
  • 6 top evenly with caramelized onions and butter.
  • 7 sprinkle with kosher salt and fresh ground black pepper to taste.
  • 8 bake at 350 for 15-20 minutes.
