Cajun Roast Potatoes

Ingredients
- Servings: 6
- 5 russet potatoes
- 1/4 cup olive oil
- 2 shallots, finely chopped
- 1 clove minced garlic
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Recipe
- 1 preheat oven to 450°.
- 2 peel potatoes, wash and pat dry.
- 3 cut each potato into 8 lengthwise wedges.
- 4 stir together oil, shallots, garlic, salt, paprika, cayenne pepper and black pepper.
- 5 add potatoes and coat evenly with oil mixture.
- 6 place in roasting pan and bake until golden brown and tender, about 45 minutes.
- 7 turn potatoes every 15 minutes.
- 8 transfer to serving dish and top with parsley.
