Cajun Roast Potatoes

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 5 russet potatoes
  • 1/4 cup olive oil
  • 2 shallots, finely chopped
  • 1 clove minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 preheat oven to 450°.
  • 2 peel potatoes, wash and pat dry.
  • 3 cut each potato into 8 lengthwise wedges.
  • 4 stir together oil, shallots, garlic, salt, paprika, cayenne pepper and black pepper.
  • 5 add potatoes and coat evenly with oil mixture.
  • 6 place in roasting pan and bake until golden brown and tender, about 45 minutes.
  • 7 turn potatoes every 15 minutes.
  • 8 transfer to serving dish and top with parsley.
