Cauliflower Mash

Ingredients

- 1 large cauliflower, broken into florets
- 1 ounce butter or 2 tablespoons olive oil
- 2 -3 tablespoons soymilk
- 1 pinch salt and pepper
- 1 pinch grated nutmeg (optional)
Recipe
- 1 bring 2 inches water to a boil in a large saucepan. put in the cauliflower florets, bring back to a boil, cover and cook for 5-7 minutes, until the cauliflower is tender. drain well.
- 2 put the cauliflower into a food processor with the butter or olive oil, soy milk and salt and pepper and grated nutmeg if using. whiz until you get a smooth, thick consistency.
- 3 return to the saucepan and gently reheat, stirring so that it doesn't catch, then serve.
