Cauliflower Mash

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 large cauliflower, broken into florets
  • 1 ounce butter or 2 tablespoons olive oil
  • 2 -3 tablespoons soymilk
  • 1 pinch salt and pepper
  • 1 pinch grated nutmeg (optional)

Recipe

  • 1 bring 2 inches water to a boil in a large saucepan. put in the cauliflower florets, bring back to a boil, cover and cook for 5-7 minutes, until the cauliflower is tender. drain well.
  • 2 put the cauliflower into a food processor with the butter or olive oil, soy milk and salt and pepper and grated nutmeg if using. whiz until you get a smooth, thick consistency.
  • 3 return to the saucepan and gently reheat, stirring so that it doesn't catch, then serve.
