Celeriac, Potato And Roasted Garlic Mash

Ingredients

- 1 lemon, juice of
- 1 kg celeriac
- 500 g potatoes, peeled and chopped
- 4 large garlic cloves
- 50 g butter
- 2 tablespoons cream
- salt
- pepper
Recipe
- 1 preheat oven to 200°c.
- 2 add lemon juice to a bowl of water.
- 3 peel and dice celeriac and add to water (lemon prevents browning).
- 4 add celeriac and potato to 2 separate saucepans of water that has been salted.
- 5 cook celeriac for 25 minutes or until tender and cook potato for 15 minutes, or until tender. drain.
- 6 place garlic on baking tray and roast for about 20 minutes, let cool and peel away skins.
- 7 add butter and cream to potatoes and mash.
- 8 using a food processor, add celeriac and garlic and pulse until smooth, scraping down the sides as necessary.
- 9 add to potato mash and stir to combine.
