Celery Vichyssoise

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 onion
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 cups chicken broth or 3 cups vegetable broth
  • 2 potatoes
  • 1 bunch celery
  • 1 cup milk
  • fresh ground pepper

Recipe

  • 1 saute 1 chopped onion in 1 t butter until softened, about 5 minute.
  • 2 stir in 1 t flour.
  • 3 stir in chicken or vegetable broth which ever you are using and fresh ground black pepper.
  • 4 add 2 cubed peeled potatoes and 1 bunch sliced celery, about 6 cups.
  • 5 bring to a boil. cover and simmer, from 20 - 25 minutes.
  • 6 puree in a food processor or blender.
  • 7 reheat with 1 cup milk.
  • 8 serves 4 - 6.
