Celery Vichyssoise

Ingredients

- 1 onion
- 1 tablespoon butter
- 1 tablespoon flour
- 3 cups chicken broth or 3 cups vegetable broth
- 2 potatoes
- 1 bunch celery
- 1 cup milk
- fresh ground pepper
Recipe
- 1 saute 1 chopped onion in 1 t butter until softened, about 5 minute.
- 2 stir in 1 t flour.
- 3 stir in chicken or vegetable broth which ever you are using and fresh ground black pepper.
- 4 add 2 cubed peeled potatoes and 1 bunch sliced celery, about 6 cups.
- 5 bring to a boil. cover and simmer, from 20 - 25 minutes.
- 6 puree in a food processor or blender.
- 7 reheat with 1 cup milk.
- 8 serves 4 - 6.
