Chicken Cacciatore

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 1/2 kg chicken pieces
  • 60 g mushrooms
  • 1 large onion
  • 2 garlic cloves
  • 1 tablespoon oil
  • 470 g whole tomatoes
  • 1 bay leaf
  • 1/2 cup red wine
  • salt
  • pepper

Recipe

  • 1 slice mushrooms and onion, crush garlic.
  • 2 heat oil in pan, fry chicken pieces until golden brown.
  • 3 remove from pan, drain well.
  • 4 add onion, mushrooms and garlic to pan, saute until onion is tender.
  • 5 return chicken to the pan, add ndrained, mashed tomatoes, bayleaf and wine.
  • 6 cook slowly, covered, for 45 minutes, or until chicken is tender.
  • 7 remove bayleaf, and serve with mashed potatoes and green beans.
