Chilli Corn Tamale Cakes

Ingredients
- 400 g corn kernels
- 125 g self-raising flour
- 2 eggs
- 4 spring onions
- 1 potato
- 2 red chili
- 2 tablespoons coriander
- 5 tablespoons milk
- 4 tablespoons vegetable oil
- 2 teaspoons salt
Recipe
- 1 beat eggs.
- 2 finely chop coriander and red chillies.
- 3 finely chop the potato once boiled.
- 4 mix all ingredients.
- 5 heat 1 tbsp oil in a frying pan over medium heat.
- 6 cook heaped tablespoons of the mixture for 3-4 minutes each side until crisp.
- 7 add more oil for each batch as required.
- 8 serve with ultimate avocado dip.
