Chilli Corn Tamale Cakes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 400 g corn kernels
  • 125 g self-raising flour
  • 2 eggs
  • 4 spring onions
  • 1 potato
  • 2 red chili
  • 2 tablespoons coriander
  • 5 tablespoons milk
  • 4 tablespoons vegetable oil
  • 2 teaspoons salt

Recipe

  • 1 beat eggs.
  • 2 finely chop coriander and red chillies.
  • 3 finely chop the potato once boiled.
  • 4 mix all ingredients.
  • 5 heat 1 tbsp oil in a frying pan over medium heat.
  • 6 cook heaped tablespoons of the mixture for 3-4 minutes each side until crisp.
  • 7 add more oil for each batch as required.
  • 8 serve with ultimate avocado dip.
