Country Corn Chowder

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 tablespoon butter
  • 1 medium yellow onion, chopped
  • 3 medium russet potatoes, peeled and cut into 1/2 inch cubes (about 1 lb)
  • 2 cups chicken broth
  • 1 cup corn (fresh, frozen or well-drained canned)
  • 1 cup milk
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon ground black pepper
  • chopped chives

Recipe

  • 1 melt butter in a large saucepan over medium-high heat.
  • 2 add onion and cook, stirring frequently, until golden and tender, about 7-10 minutes.
  • 3 add potatoes and chicken broth. bring mixture to a boil. reduce heat to low and simmer, partially covered, until potatoes are tender, about 15-20 minutes.
  • 4 stir in corn, milk, salt and pepper; simmer uncovered 5 minutes.
  • 5 ladle chowder into bowls.
  • 6 sprinkle with chopped chives.
