Country Corn Chowder

Ingredients

- 1 tablespoon butter
- 1 medium yellow onion, chopped
- 3 medium russet potatoes, peeled and cut into 1/2 inch cubes (about 1 lb)
- 2 cups chicken broth
- 1 cup corn (fresh, frozen or well-drained canned)
- 1 cup milk
- 1/2 teaspoon salt (optional)
- 1/4 teaspoon ground black pepper
- chopped chives
Recipe
- 1 melt butter in a large saucepan over medium-high heat.
- 2 add onion and cook, stirring frequently, until golden and tender, about 7-10 minutes.
- 3 add potatoes and chicken broth. bring mixture to a boil. reduce heat to low and simmer, partially covered, until potatoes are tender, about 15-20 minutes.
- 4 stir in corn, milk, salt and pepper; simmer uncovered 5 minutes.
- 5 ladle chowder into bowls.
- 6 sprinkle with chopped chives.
