Cream Of Carrot Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large onion, sliced
  • 1 teaspoon canola oil
  • 2 cups defatted chicken or 2 cups vegetable stock
  • 4 ounces carrots, sliced
  • 1 large potato, cubed
  • 1/2 teaspoon dried thyme
  • 3/4 cup skim milk

Recipe

  • 1 in a 2-quart saucepan, saute the onions in the oil until softened, about 5 minutes.
  • 2 add the stock, carrots, potatoes and thyme.
  • 3 simmer until tender, about 25 minutes.
  • 4 puree in a food mill or blender.
  • 5 stir in the milk.
