Cream Of Fiddlehead Soup

Ingredients

  • Servings: 4
  • 1/4 cup green onion, choped
  • 1/4 cup butter
  • 3 cups chicken broth
  • 1 1/2 cups cubed potatoes
  • 4 cups fiddleheads
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups whole milk

Recipe

  • 1 saute onions in butter 5 minutes. stir in broth, potatoes, fiddleheads and seasoning.
  • 2 cover and simmer until potatoes are cooked.
  • 3 purée in blender.
  • 4 stir in milk. serve hot.
