Creamed Corn Soup

Ingredients

- cooking spray
- 1/2 cup chopped onion
- 1 medium potato, peeled and cubed
- 2 garlic cloves, minced
- 1 (15 ounce) can whole corn, drained
- 3 tablespoons flour
- 1/2 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper
- 2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans chicken broth
- 1 cup milk
- 2 medium tomatoes, chopped
- salt and pepper
- paprika (to garnish)
Recipe
- 1 spray large saucepan with cooking spray. sauté onion, potato and garlic until onion is tender, about 5 minutes.
- 2 stir in corn, flour, coriander and cayenne; cook 1-2 minutes, stirring frequently.
- 3 stir in broth and heat to boiling. reduce heat and simmer, covered, until potato is tender, about 10 minutes.
- 4 process mixture in food processor or blender until almost smooth; return to saucepan.
- 5 stir in milk and tomatoes; heat just to boiling.
- 6 reduce heat and simmer, uncovered, 5 minutes. season to taste with salt and pepper.
- 7 serve in bowls, sprinkled with paprika.
