Creamed Corn Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • cooking spray
  • 1/2 cup chopped onion
  • 1 medium potato, peeled and cubed
  • 2 garlic cloves, minced
  • 1 (15 ounce) can whole corn, drained
  • 3 tablespoons flour
  • 1/2 teaspoon ground coriander
  • 1/8 teaspoon cayenne pepper
  • 2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans chicken broth
  • 1 cup milk
  • 2 medium tomatoes, chopped
  • salt and pepper
  • paprika (to garnish)

Recipe

  • 1 spray large saucepan with cooking spray. sauté onion, potato and garlic until onion is tender, about 5 minutes.
  • 2 stir in corn, flour, coriander and cayenne; cook 1-2 minutes, stirring frequently.
  • 3 stir in broth and heat to boiling. reduce heat and simmer, covered, until potato is tender, about 10 minutes.
  • 4 process mixture in food processor or blender until almost smooth; return to saucepan.
  • 5 stir in milk and tomatoes; heat just to boiling.
  • 6 reduce heat and simmer, uncovered, 5 minutes. season to taste with salt and pepper.
  • 7 serve in bowls, sprinkled with paprika.
