Creamy Mashed Potatoes

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 5 lbs potatoes, peeled and cubed
  • 3 cloves garlic, peeled
  • 1 (3 ounce) package light cream cheese, softened
  • 1/2 cup 1% low-fat milk
  • 2 tablespoons butter
  • 1 -1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped green onion, optional
  • 1/8 teaspoon paprika, optional

Recipe

  • 1 place potatoes and garlic in a saucepan; cover with water.
  • 2 bring to a boil.
  • 3 reduce heat; cover and cook for 20-25 minutes or until potatoes are very tender.
