Ingredients

- 2 medium potatoes, peeled and diced (2 cups)
- 1/4 cup diced onion
- 1/3 cup margarine
- 6 eggs
- 2 tablespoons milk
- 1 cup cooked ham, diced
- 1/4 teaspoon black pepper
- salt
- cheddar cheese or lamb sausage or bacon or mushrooms or green pepper
Recipe
- 1 in a large skillet, cook potatoes and onion in
- 2 margarine over medium heat for 8 to 10 minutes or until tender.
- 3 stir often so potatoes and onion don't stick.
- 4 beat together eggs, milk, salt and pepper.
- 5 stir in ham.
- 6 pour over potato mixture. cook until fluffy like scrambled eggs.
- 7 take extra care not to burn eggs.
- 8 enjoy!
