Amy's Farmer's Breakfast

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 medium potatoes, peeled and diced (2 cups)
  • 1/4 cup diced onion
  • 1/3 cup margarine
  • 6 eggs
  • 2 tablespoons milk
  • 1 cup cooked ham, diced
  • 1/4 teaspoon black pepper
  • salt
  • cheddar cheese or lamb sausage or bacon or mushrooms or green pepper

Recipe

  • 1 in a large skillet, cook potatoes and onion in
  • 2 margarine over medium heat for 8 to 10 minutes or until tender.
  • 3 stir often so potatoes and onion don't stick.
  • 4 beat together eggs, milk, salt and pepper.
  • 5 stir in ham.
  • 6 pour over potato mixture. cook until fluffy like scrambled eggs.
  • 7 take extra care not to burn eggs.
  • 8 enjoy!
