Corn And Potato Dinner (for Babies)

Ingredients
- Servings: 4
- 1 tablespoon olive oil
- 1/2 small onion, finely chopped
- 1 small carrot, finely chopped
- 1/2 cup water
- 1 small potato, peeled and chopped
- 3 tablespoons corn
- 1 teaspoon herbs (basil, oregano, or thyme)
Recipe
- 1 heat oil in a small skillet, over medium heat.
- 2 fry onion and carrot until soft, about 5 minutes.
- 3 put 1/2 of the carrot/onion mixture into a bowl and set aside.
- 4 add water potato, and corn to the pan.
- 5 stir to mix.
- 6 cover and simmer 15 minutes.
- 7 add herbs.
- 8 puree.
- 9 add reserved mixture to puree, mix well.
- 10 add water if needed.
- 11 serve.
- 12 freeze leftovers in ice cube trays.
