Corn And Potato Hash

Ingredients
- Servings: 4
- 1 cup corn, fresh or 16 ounces corn, drained
- 1 teaspoon vegetable oil
- 1/2 onion, chopped
- 1/2 cup green pepper, chopped
- 2 medium potatoes, cooked and sliced
- 1 dash pepper
- 1 tablespoon pimentos, chopped
- 1/2 teaspoon salt (optional)
Recipe
- 1 heat oil in skillet.
- 2 add onions and green pepper, and cook until vegetables are tender.
- 3 add potatoes and heat until potatoes are lightly browned.
- 4 sprinkle with a dash of pepper, chopped pimentos and salt, if desired.
- 5 stir to combine and cook a few minutes more.
- 6 just before serving you can add 1 cup of low fat mozzarella or cheddar cheese can be sprinkled on top; cover.
- 7 heat until cheese is melted.
