Corn And Potato Hash

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 cup corn, fresh or 16 ounces corn, drained
  • 1 teaspoon vegetable oil
  • 1/2 onion, chopped
  • 1/2 cup green pepper, chopped
  • 2 medium potatoes, cooked and sliced
  • 1 dash pepper
  • 1 tablespoon pimentos, chopped
  • 1/2 teaspoon salt (optional)

Recipe

  • 1 heat oil in skillet.
  • 2 add onions and green pepper, and cook until vegetables are tender.
  • 3 add potatoes and heat until potatoes are lightly browned.
  • 4 sprinkle with a dash of pepper, chopped pimentos and salt, if desired.
  • 5 stir to combine and cook a few minutes more.
  • 6 just before serving you can add 1 cup of low fat mozzarella or cheddar cheese can be sprinkled on top; cover.
  • 7 heat until cheese is melted.
