Corn Chowder

Total Time: 6 hrs 15 mins Preparation Time: 15 mins Cook Time: 6 hrs

Ingredients

  • Servings: 8
  • 8 ounces bacon
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 29 ounces creamed corn
  • 29 ounces corn
  • 2 cups chicken broth
  • 8 red potatoes, peeled and cubed
  • 2 small bay leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 tablespoons flour
  • 8 tablespoons butter

Recipe

  • 1 peel and cube potato; set aside.
  • 2 cut up bacon into small pieces.
  • 3 in large saucepan on low heat, fry the bacon until crisp.
  • 4 add in onion and garlic, sauté until onion is transparent.
  • 5 put in crockpot.
  • 6 stir in cream corn, chicken broth, potato, and spices.
  • 7 low 4-6 hours.
  • 8 mix flour/butter into blond roux, add just enough butter to make flour wet.
  • 9 mix into chowder, let thicken.
