Aunt Sophie's

Total Time: 1 hr 45 mins Preparation Time: 30 mins Cook Time: 1 hr 15 mins

Ingredients

  • 5 potatoes (russets and yukons work great)
  • 1 onion, chopped
  • 4 tablespoons butter

Recipe

  • 1 boil the potatoes just until tender.
  • 2 in the meantime, sweat the chopped onion in the butter until translucent.
  • 3 when potatoes are cool enough to handle, peel and cut into bite sized chunks.
  • 4 put potatoes in baking dish.
  • 5 pour butter and onions over potatoes.
  • 6 cover dish with foil and bake at 350 degrees for about an hour.
  • 7 shake dish once or twice during baking.
  • 8 remove foil and allow to brown to your preference.
  • 9 note: you can cook these longer at a lower temperature if you wish. they're done when you think they're done.
  • 10 note: add salt and pepper if you like.
