Ingredients
- 5 potatoes (russets and yukons work great)
- 1 onion, chopped
- 4 tablespoons butter
Recipe
- 1 boil the potatoes just until tender.
- 2 in the meantime, sweat the chopped onion in the butter until translucent.
- 3 when potatoes are cool enough to handle, peel and cut into bite sized chunks.
- 4 put potatoes in baking dish.
- 5 pour butter and onions over potatoes.
- 6 cover dish with foil and bake at 350 degrees for about an hour.
- 7 shake dish once or twice during baking.
- 8 remove foil and allow to brown to your preference.
- 9 note: you can cook these longer at a lower temperature if you wish. they're done when you think they're done.
- 10 note: add salt and pepper if you like.
