Baked Potato Soup

Ingredients
- 4 large baking potatoes
- 3 tablespoons green onions, chopped
- 12 slices bacon, cooked and crumbled
- 1 1/4 cups shredded cheddar cheese
- 2/3 cup all-purpose flour
- 2/3 cup butter
- 6 cups milk
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces sour cream
Recipe
- 1 preheat oven to 400 degrees.
- 2 wash potatoes and prick several times with fork.
- 3 bake for 1 hour.
- 4 let cool.
- 5 cut potatoes in half and scoop out pulp into a bowl.
- 6 melt butter in large pot over low heat.
- 7 add flour, stirring until smooth.
- 8 cook 1 minute stirring constantly.
- 9 gradually add milk.
- 10 cook over medium heat until the mixture is thickened and bubbly.
- 11 add potato pulp, salt, pepper, 2 tbsp green onions, 1/2 cup bacon, and 1 cup cheese.
- 12 cook until heated throughout.
- 13 stir in sour cream.
- 14 add extra milk if necessary for desired thickness.
- 15 serve and top with extra green onion, bacon, and cheese.
