Baked Potato Soup

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • 4 large baking potatoes
  • 3 tablespoons green onions, chopped
  • 12 slices bacon, cooked and crumbled
  • 1 1/4 cups shredded cheddar cheese
  • 2/3 cup all-purpose flour
  • 2/3 cup butter
  • 6 cups milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces sour cream

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 wash potatoes and prick several times with fork.
  • 3 bake for 1 hour.
  • 4 let cool.
  • 5 cut potatoes in half and scoop out pulp into a bowl.
  • 6 melt butter in large pot over low heat.
  • 7 add flour, stirring until smooth.
  • 8 cook 1 minute stirring constantly.
  • 9 gradually add milk.
  • 10 cook over medium heat until the mixture is thickened and bubbly.
  • 11 add potato pulp, salt, pepper, 2 tbsp green onions, 1/2 cup bacon, and 1 cup cheese.
  • 12 cook until heated throughout.
  • 13 stir in sour cream.
  • 14 add extra milk if necessary for desired thickness.
  • 15 serve and top with extra green onion, bacon, and cheese.
