Baked Potato Wedges

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 tablespoons butter, melted
  • 1/4 cup catsup
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 4 large potatoes, unpeeled

Recipe

  • 1 pre-heat the oven to 220*c/425*f.
  • 2 combine melted butter, catsup, mustard and seasonings.
  • 3 scrub potatoes and dry well.
  • 4 cut each into 4 wedges.
  • 5 slash each wedge crosswise at ¼ inch intervals, but don’t cut all the way through the skin.
  • 6 place on a foil lined baking sheet, skin side down.
  • 7 brush with 1/3 of the butter mixture.
  • 8 bake 35 to 40 minutes or until the potatoes are fork tender, with crispy brown edges basting periodically with the remaining butter mixture.
