Caldillo (new Mexican Green Chile Stew)

Ingredients

  • Servings: 4
  • 2 lbs lean beef round or 2 lbs lamb
  • 2 tablespoons oil
  • 3 medium potatoes, diced
  • 1/2 cup onion, sliced
  • 1 garlic clove, minced
  • 2 teaspoons salt
  • 6 green chili peppers

Recipe

  • 1 cube meat, sprinkle with salt and fry until brown in oil.
