Carrot Potato Boats

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 4 small baking potatoes
  • 4 ounces packages neufchafel cheese, cut into chunks and softened
  • 3 -4 tablespoons skim milk
  • 1/4 teaspoon salt
  • pepper
  • 1 cup cooked chopped carrot, pureed
  • 2 tablespoons chopped green onions

Recipe

  • 1 bake potatoes in a 375 oven for 45 minutes or until done; cool slightly.
  • 2 cut potatoes in half lengthwise; scoop out potatoes into small mixer bowl; reserving shells.
  • 3 add cheese, milk, salt and pepper; beat till fluffy; add more milk if necessary.
  • 4 folk in carrot and green onion.
  • 5 spoon potato mixture into potato shells bake on a baking sheet at 375 for 15 minutes.
