- 8 large carrots
- 1/2 cup honey
- 4 tablespoons oil
- lemon rind, grated
- 1 sweet potato
- 4 tablespoons sugar
- ginger
Recipe
- 1 slice carrots and sweet potatoes and cook 10 minutes in boiling salted water just to cover.
- 2 add honey, sugar and oil. cook gently until liguid is absorbed and carrots slightley glazed,about 30 minutes.
- 3 sprinkle with lemon rind and ginger.
