Cheeseless Broccoliless Chickenless Chicken Broccoli Cheese Soup

Total Time: 8 hrs 10 mins Preparation Time: 10 mins Cook Time: 8 hrs

Ingredients

  • Servings: 5
  • 3 large yukon gold potatoes
  • 1 clove garlic, chopped
  • 1 1/2 cups frozen peas
  • 2 -3 cups soymilk
  • 1/2 cup coconut milk
  • 1/4 cup vegetable stock powder
  • spike seasoning, to taste
  • sea salt, to taste
  • black pepper, freshly ground,to taste
  • 1/2 tablespoon nutritional yeast

Recipe

  • 1 throw everything but the nutritional yeast and the peas in a crockpot.
  • 2 add enough soymilk to just cover the potatoes.
  • 3 cook on low for 7-8 hours, then mash it with a potato masher til it's only slightly chunky.
  • 4 add the nutritional yeast, peas and more soymilk if it needs it (it should be a thick soup/stew consistency) turn crockpot to high and cook one more hour.
  • 5 add spike, sea salt and pepper to taste.
  • 6 ta-da!
  • 7 cheeseless, broccoliless, chickenless chicken broccoli cheese soup.
  • 8 (you could also add tiny florets of broccoli if you so choose, to just make it chickenless and cheeseless).
