Cheesy Mashed Potatoes

Total Time: 1 hr 30 mins Preparation Time: 45 mins Cook Time: 45 mins

Ingredients

  • Servings: 15
  • 5 lbs potatoes, peeled and quartered
  • 6 ounces cream cheese, softened
  • 1 cup sour cream
  • 4 ounces extra-sharp cheddar cheese, grated
  • 1/2 cup parmesan cheese
  • 1 tablespoon salt
  • 1 teaspoon fresh ground pepper

Recipe

  • 1 boil potatoes; drain well. mash.
  • 2 in a large bowl, combine remaining ingredients; mix well.
  • 3 add potatoes to mixture; mash again.
  • 4 grease (or spray) a 3-quart casserole dish; spoon potatoes into dish and spread evenly.
  • 5 allow potato mixture to cool to room temperature; cover tightly.
  • 6 store in refrigerator up to a week ahead of time.
  • 7 remove from refrigerator one hour before baking.
  • 8 potatoes may be stiff. add a bit of milk then fluff up the potatoes.
  • 9 bake 45 minutes uncovered at 350 degrees.
