Chicken With Veggies In Sour Cream Sauce

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 3 boneless chicken breasts, sliced into strips
  • 2 teaspoons garlic, minced
  • 1/4 cup cashews, chopped
  • 1 small red bell pepper, cut into strips
  • 1 cup snow peas
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey

Recipe

  • 1 in a large cast iron skillet or wok, heat oil over medium-high.
  • 2 add chicken and garlic - cook for about 4 minutes.
  • 3 add cashews, bell pepper and snow peas - cook until tender, about 2 minutes.
  • 4 add chicken broth, reduce heat and simmer for 8-10 minutes or until chicken is cooked through.
