Creamy Ham & Potato Soup

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 small onion (chopped fine)
  • 1 stalk celery (chopped fine)
  • 4 tablespoons butter
  • 6 large russet potatoes (peeled and diced)
  • 1/2 lb ham (cooked and diced)
  • 14 1/2 ounces cream of potato soup
  • 1/3 cup flour
  • 3 chicken bouillon cubes
  • 2 cups water
  • 8 ounces cream cheese (softened)
  • 4 cups milk

Recipe

  • 1 saute onion and celery in butter until tender.
  • 2 in large kettle, put water, bullion, potatoes with onion.
  • 3 cover and cook until potatoes are tender.
  • 4 blend cream cheese and flour with 1 cup of milk until smooth.
  • 5 stir into potato mixture.
  • 6 add milk, ham, and can of potato soup.
  • 7 bring to boil and boil for 1 minute.
  • 8 let simmer until ready to serve.
