Corn And Smoked Mozzarella Mashed Potatoes

Ingredients

  • Servings: 8
  • 3 cups fresh corn kernels
  • 2 1/2 lbs red potatoes, quartered
  • 3/4 cup 2% low-fat milk
  • 1/2 cup shredded smoked mozzarella cheese
  • 3 tablespoons butter, softened
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Recipe

  • 1 heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • 2 add in the corn; stir/saute 5 minutes or until lightly browned; cool.
  • 3 place potatoes in a saucepan; add water to cover.
  • 4 bring to a boil; lower heat, simmer 15 minutes or until tender.
