Corn Chowder

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • 6 slices bacon, chopped
  • 1 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green peppers or 1/2 cup red pepper, chopped
  • 2 large idaho potatoes, peeled and chopped
  • 2 cups water
  • 2 (15 1/4 ounce) cans corn
  • 1 (12 ounce) can evaporated milk
  • 1 cup water
  • salt and pepper

Recipe

  • 1 fry chopped bacon on medium high heat, after a few minutes add onion, celery, pepper, and fry for a few more minutes. transfer ingredients to stock pot turn down to medium low heat.
  • 2 add 2 cups of water and potatoes and let simmer until potatoes are almost cooked through. 15-20 minutes.
  • 3 add evaporated milk, and one more cup of water. you can use the evaporated milk can to add the water with. simmer for 15-20 more minutes. while simmering salt and pepper to taste.
  • 4 serve and enjoy.
