Ingredients

- 1 1/2 lbs red potatoes, quatered
- 1 cup diced red bell pepper
- 1 1/2 lbs chicken breasts, cut into 2 inch pieces
- 1 cup sour cream
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 ounce powdered ranch dressing mix
- 1 teaspoon garlic salt
Recipe
- 1 preheat oven to 350°f.
- 2 blanch potatoes in boiling water for 3 minutes. drain.
- 3 prepare a 9x13 casserole dish with nonstick spray. spread the potatoes in the bottom of the dish. layer the peppers and chicken on top.
- 4 in a large bowl combine the sour cream, soup, ranch dressing mix , and garlic salt. spread over the chicken.
- 5 cover with foil and bake for 1 1/2 hours, until browned and bubbly.
