Baked Potato Soup

Ingredients
- Servings: 4
- 4 large baking potatoes
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 6 cups milk
- 1 cup sour cream
- 1/2 cup thinly sliced green onion
- 1 cup shredded cheddar cheese
Recipe
- 1 bake potatoes at 350 degrees f for 1 hr.
- 2 cool completely.
- 3 peel and cube potatoes.
- 4 in lg saucepan, melt butter.
- 5 stir in flour, salt and pepper until smooth.
- 6 gradually add milk.
- 7 bring to a boil.
- 8 cook and stir for 2 minutes or until thickened.
- 9 remove from heat add sour cream.
- 10 add potatoes and green onions.
- 11 garnish with cheese.
