Baked Potato Soup

Total Time: 3 hrs Preparation Time: 1 hr Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 4 large baking potatoes
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 cups milk
  • 1 cup sour cream
  • 1/2 cup thinly sliced green onion
  • 1 cup shredded cheddar cheese

Recipe

  • 1 bake potatoes at 350 degrees f for 1 hr.
  • 2 cool completely.
  • 3 peel and cube potatoes.
  • 4 in lg saucepan, melt butter.
  • 5 stir in flour, salt and pepper until smooth.
  • 6 gradually add milk.
  • 7 bring to a boil.
  • 8 cook and stir for 2 minutes or until thickened.
  • 9 remove from heat add sour cream.
  • 10 add potatoes and green onions.
  • 11 garnish with cheese.
