Autumn Eggs With Potatoes

Ingredients
- Servings: 8
- 1/2 medium onion, finely chopped
- 1 tablespoon butter
- 3 cups potatoes, cut into small cubes (cold and cooked)
- 1 (4 ounce) can diced green chilies, drained
- 1 cup small curd cottage cheese
- 1 -2 cup cheddar cheese, grated
- 10 eggs, slightly beaten
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 pinch nutmeg
Recipe
- 1 brown onion in butter.
- 2 mix all ingredients together and place in greased 9x13 pan.
- 3 cover and refrigerate overnight.
- 4 in the morning, bake at 350 for 1 hour or until set.
- 5 serve with salsa on the side.
- 6 garish with fresh cilantro and tomato slices.
