Creamy Green Chili And Cheese Soup

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 5 tablespoons butter
  • 1 1/2 cups chopped onions
  • 3 garlic cloves, finely chopped
  • 1/2 teaspoon dried oregano, crushed
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 teaspoon hot pepper sauce
  • 1 (7 ounce) can diced green chilies
  • 1 teaspoon chopped fresh cilantro
  • 1/2 cup heavy whipping cream
  • 1 1/2 cups shredded monterey jack cheese

Recipe

  • 1 melt butter in medium saucepan over medium heat. add onion, garlic and oregano; cook for 10 minutes.
  • 2 add chicken broth, potatoes and hot pepper sauce; bring to a boil.
  • 3 cook for 20 minutes or until potatoes are tender.
  • 4 add green chiles, cream and cheese.
  • 5 heat until cheese is melted.
  • 6 season with salt and black ground pepper to taste. garnish with cilantro.
